Hi friends! Did you know you can immediately lighten your global footprint and help stall climate change by simply replacing one meal a day with a plant-based meal? Friends, you don’t need to become full-fledged vegans or vegetarians to make a difference. We’re born to be omnivores after all (just look at all the sharp teeth we have!), so it’s understandable if you can’t commit to eating only veggies, legumes, plants and fruits. But if you can commit to eating only plant-based foods for one meal a day, everyday, you’re off on a good start to help saving our planet, and stalling climate change and global warming!

You may ask, how can I start? Well you’re in luck. It’s easier and easier to access plant-based options and alternatives. Impossible Meats and Beyond Meat make great-tasting plant-based “burgers” and “meats.” Just try an Impossible Whopper and you’ll be a fan, like me! In our house, we only drink soy or oat milk. Oat milk tastes amazing with coffee, and soy milk makes our smoothies, well smooth!

Additionally, I commit to eating only vegetables and plant-based meals for lunch. (I rarely eat breakfast as I’ve been intermittently fasting for years now. But if I do eat breakfast, I’ll have a smoothie.) I’ve been a fan of Splendid Spoon’s ready-to-eat vegan smoothies and soups for years now. WHAT IS SPLENDID SPOON

Splendid Spoon is a company based in Brooklyn, New York. Nicole Centeno founded Splendid Spoon, and she once struggled with an eating disorder. Now her company’s mission is to help people feel good about food again, and nourish our bodies with at least one plant-based meal a day. Splendid Spoon’s meals are not part of a fad diet. It’s a habit and life changer.

Splendid Spoon meals are convenient, plant-based, vegan, and delicious. As a busy mom who manages the household and works (full-time now), I’ve often relied on Splendid Spoon’s nutrient dense plant-based, ready-to-eat meal service to eat well. Busy doesn’t mean I, or you, have to be unhealthy.

Is Splendid Spoon healthy? Busy can be healthy too!

In the mornings, I have to get Phil ready for school, walk Panda (our dog), and answer work emails. Before I drive off, I grab a Splendid Spoon soup, smoothie, and/or bowl, and I'm ready for a hectic work day. Splendid Spoon makes my life easier because at work, I don’t have to think about what I’m going to have for lunch or worry about going hungry. Additionally, I’m fully-committed to my delicious plant-based vegan meal. I know I’m making a difference by choosing to replace one meal, every day, with a plant-based meal.

It’s not easy to cut meat, dairy, poultry from your diet. I know. I love sushi. I used to love steaks. But my taste buds are slowly changing. I crave veggies, legumes, fruits, and plants! I salivate at the thought of a freshly-blended smoothie. I’m not a vegetarian or a vegan, but I too am slowly making changes, and hoping to make a difference in this world.

I find myself experimenting with salad recipes. My favorite salads include rainbow carrots, kale, crushed garlic, olive oil, a drizzle of honey, and freshly squeezed mandarin oranges. Don’t forget salt and pepper!
